Baked Banana Coconut Oatmeal
Servings:1-2
Ingredients:
70g Gluten Free Quick Cooking Oats
1/2 Banana Mashed
1 tsp Baking Powder
2 tsp Vanilla Extract
10g Honey
Cinnamon to your liking
Sprinkle of Himalayan Salt
Top:
1/2 Banana
1 Tbsp Unsweetened Shredded Coconut
10g Honey
Sprinkle Himalayan Salt
Directions: oven 350 degrees
Toast Coconut in baking dish 5-10 minutes until brown checking frequently, when toasted take out of oven to cool
Mash banana in baking dish
Add 70g oats
Add hot water to just cover oats and mix banana with oats
Next Add your baking powder, vanilla extract, 10g honey, cinnamon and himalayan salt
mix all together
Top: cut up other half of banana and add toasted coconut
Bake for 30 minutes at 350 degrees
let it cool for 15 minutes add 10g honey and himalayan salt
